Marchesi has always maintained that cooking, though there may be no change in culinary technique, takes its identity from the regional produce it draws on. The same cook will produce very different kinds of dishes depending on wheter he works in the Sudtirol or Siciliy.
Having acquired this sensibility, Marchesi went further: local ingredients formed his staple, but he also made use of the produce offered by the market of the global village. For these reasons, some of his dishes include ingredients from other culinary cultures, which give a touch of internatiolism to his cuisine, so avoiding the danger that it might fall into the merely vernacular.
